Strawberry Honey Challah French Toast Bake

A lightened up overnight french toast bake that is high in protein and low in added sugar. Slight strawberry flavors plus a touch of maple syrup pairs perfectly with the sweet flavor and chewy texture of Breadsmith’s Honey Challah. This recipe makes for a delicious morning treat or Valentine’s brunch and is SO easy to meal prep for any day of the week.

INGREDIENTS
One loaf of Breadsmith Honey Challah
6 eggs
1 cup Fairlife skim milk (any milk of choice will work)
3/4 cup strawberry Greek yogurt (any brand)*
1/4 cup pure maple syrup
Sliced strawberries
Optional - powdered sugar for sprinkling on top

DIRECTIONS
Slice Honey Challah into thick cubes
Add eggs + egg whites, milk, greek yogurt, and maple syrup to a bowl and mix until well combined
Pour mixture over the bread and stir to coat each piece evenly
Add sliced strawberries on top
Cover with foil and place in the refrigerator overnight
In the morning, place the french toast bake in the oven at 350 degrees for 50-60 min or until golden brown
Sprinkle with powdered sugar, add a drizzle of maple syrup, serve, and enjoy!

RECIPE NOTES
For a less “bready” french toast, only use 1/2 - 3/4 of the Honey Challah loaf
For a more “eggy” or “bread pudding” like texture, add 6 egg whites to the recipe
Any milk will work in this recipe (keep in mind that Fairlife provides more protein per serving than other milks)
I used Dannon Light and Fit strawberry cheesecake Greek yogurt in this recipe
